Czech wheat flour for authentic-tasting recipes

Wheat flour is one of the most important ingredients in baking. Czech flour is unique, as it’s sold according to the roughness of the milling. With this quality flour, you’ll get great results whatever you’re cooking.

Choose between three types of Předměřice flour:

  • Fine: Used for thickening sauces and soups, and when making anything light and delicate such as pancakes, sponge cakes and pie crusts. Essential for Czech gingerbread and Christmas cookies
  • Semi-coarse: Used in traditional Czech cakes and the sweet breads that are made at Christmas and Easter
  • Coarse: Used for Czech dumplings and in traditional Czech cakes

Each type of flour is enriched with B-vitamins (including B1 thiamine, B2 riboflavin, B3 niacin, B6 pyridoxine and B9 folic acid) and trace elements (Se, Zn, Mg, Fe). Today’s diet does not usually contain enough of these supplements, which are considered important for good heart health.

Sold in 1kg packets, the flour lasts 9 months.

The flour is produced by one of the biggest manufacturers of grain mill products in the Czech Republic. Using their own 18,000-ton capacity grain silo, they process 300 tons of food quality wheat and rye each day, using the latest high-tech equipment while following the traditions of the Předměřice Mill started in 1890 by master miller Josef Voženílek.

Quality assurance

The flour comprises carefully selected varieties of locally grown wheat. It’s made in accordance with European quality management standards ISO 9001, HACCP and FSSC 22000: 2011. Each wheat delivery is checked for quality, with regular laboratory checks during the milling process.

This quality flour has been awarded the prestigious national brand quality marks: "Classy" and "Czech product."

Wheat flour

Wheat is a cereal grain. Other cereal grains include corn (maize), oats, rice, and rye. Widespread consumption of cereal grains began in the Middle East about 10,000 years ago, when agriculture first began. It was then that wheat was first planted and cultivated. Today, thousands of varieties of wheat are grown throughout the world, most requiring fertile soil and a temperate climate.

Wheat is more popular than any other cereal grain for use in baked goods. Its popularity stems from the gluten that forms when flour is mixed with water. Without gluten, raised bread is hard to imagine. Wheat is also preferred because of its mild, nutty flavor. Both factors, no doubt, account for wheat being the most widely grown cereal grain in the world.

Semi coarse

Polohrubá is literally the semi-coarse flour.
It is an ingredient in traditional Czech cakes such as Czech koláč, bábovka (bundt cake), and sweetened leaven dough (kynuté těsto), the basis of traditional Christmas sweet bread (vánočka), and Easter bread (mazanec).

Fine

Hladká, meaning smooth, is the finest grain of flour.
In Czech cuisine, it is used for thickening soups and sauces, or in the bases of light sponge cakes and pie crusts, and in pancakes, Czech ginger bread (perníčky) and linecké těsto, the main dough for many Christmas cookies. For anything which has to be light and delicate, this is your flour.

Hrubá is coarse flour.
It can also be used in the Czech cakes mentioned above. The most famous Czech meal it is used in is bread dumplings. However, you can buy the dumpling mix in or near the flour section.
