Roast Chicken with Festive Stuffing

This is a different way to cook your chicken!



  • 1 Chicken
  • Salt
  • Ground white pepper
  • 1 tablespoon oil
  • 2 tablespoons of butter


  • 2 bread rolls
  • Cream to moisten the bread
  • 100g walnuts
  • 100g chicken liver
  • A pinch of mace
  • 1 egg
  • Butter to grease aluminium
  • Foil




  1. Season the chicken with salt and pepper and place in a baking dish greased with oil or butter.
  2. Slice the rolls and sprinkle with cream. Add coarsely chopped nuts and diced or sliced liver. Season with salt, mace, egg (egg whites can be whisked) and stir thoroughly. Spread the stuffing on aluminium foil greased with butter, roll and seal.
  3. Place both the chicken and the wrapped stuffing in pre-heated oven. After a while, reduce heat and pour some water into the dish with the chicken. Baste with juices from time to time and add water if necessary. Roast until soft.
  4. De-bone the chicken and slice it. Serve with mashed potatoes and slices of od stuffing
